According to Sokomine it also happens with other trees like Banana and Coconut.
After some testing I noticed that generally trying to pick up a fruit from a tree causes it to fall and get placed on the ground. Needing another click to actually pick it up.
The "go to inventory" is maybe planned when I get around to overhauling woodcutting, currently there's no simple mechanism to do so. Destroying the river isn't right though, I thought I set them to float... maybe i missed that.
But it used to be so that they went directly into the inventory. Like how the leaves and trunks do.
looks like the float mechanic is unreliable:

having apples registered as leaves caused a few problems, including e.g. #1992 (and also the fruit just disappeared sometimes (or just stuck in the air) when using normal cutting/treecapitator vs. woodcutting).
