Well, since it's my idea, I will expand:
Farming in nether is harder than in overworld (or at least supposed to be, since that world is much more hostile). And I'm not sure what the lore is, but it's also probably some magical world with some different energies running through it, whatever.
Since plants take nutrients from soil and air, growing them in a completely different world, could have some effect on them:
If growing plants there becomes too OP, could be balanced by having special mobs that spawn there on farms or something.
Main idea: if you choose this supposedly harder way to farm - then you will be rewarded by some special plants variations
the crops could be functionally identical or very similar, but just have different (twisted, weird looking ...) shapes?
making the nether less boring aesthetically is a great idea.
i like the idea of special crops that will only grow in the nether on cultivated netherrack (or sand?) w/ lava somewhere nearby. i'm less keen on the idea that normal crops would grow there but in a weird way. perhaps the harvests would be required for certain magical items.
if we do go this route, balanced_diet (#4132) provides a mechanism to override food values and effects for specific itemstacks.
Personally I'm down for the idea that nether grown crops would have some very slight advantages over overworld grown crops (like for example, nether grown raw potatoes will not poison the player and nether grown carrots will have slightly more food value)
Perhaps some with random features... one INSERT CROP NAME HERE might poison you, another might make you jump higher.
