Yes, moretrees and ethereal palm tree leaves now cook into palmwax. Date palm leaves (moretrees:date_palm_leaves) do not. Is that intended?
this is wrong, i think a player told me this was the case. ethereal palm trees are still have their own leaves and saplings, it's just the trunks and coconuts that have been merged.
i was aware i was omitting them, but not for any good reason. wax palms are no more closely related to coconut palms than date palms. sure, why don't we allow those leaves to be turned to wax as well.

Not sure if turning date palm leaves into wax is such a good idea. Reproducing them is already very tricky because they don't produce many leaves. The species always seems to be one sapling short of dying out...
you can turn the leaves into saplings w/ a standard automated sapling farm, as much as normal? the drop rate might not be high, and they might have relatively few leaves, but as long as you harvest the leaves first, and don't use treecutting, you'll never have a problem getting more saplings.
We can hardly disallow people from using rare items in a way that doesn't make sense to us. If they do it, it may make sense to them. Else we'd also have to disable gold armour.
