The plan is to have an item which does nothing by itself except have a description and item string and metadata which item it is meant to be copied.

Can we change the icon?
Can we access the functions for place and use of the copied item?

not currently, though this is a long-standing request. see https://github.com/minetest/minetest/issues/5686.

Can we access the functions for place and use of the copied item?

i think this could be done, though there might be additional complexity w.r.t. e.g. itemframes and anvils and such.
